kielbasa & rice casserole

This is one of my families favorite dinners. I wanted something different and had the kielbasa in the refrigerator. I have a husband who hates rice, but he really loves this one. When I served it to a married son he just couldn't stop eating it.

Ingredients For kielbasa & rice casserole

  • 2 c
    dry rice
  • 4 c
    water
  • 1
    beef kielbasa
  • 1/3 c
    brown sugar, lightly packed
  • 1 can
    peas or green beans
  • 1 can
    cream of onion soup, undiluted
  • 1 can
    cream of mushroom soup, undiluted

How To Make kielbasa & rice casserole

    Put 2 Cups Rice and 4 Cups water into a 3 quart microwaveable bowl. Do NOT cover. Cook for about 13 minutes on high power, stir and cook for another 4-5 minutes.

    Slice Kielbasa into 1/4 inch slices, cut on diagonal. Place in heated pan and add brown sugar. Stir while cooking to caramelize the kielbasa. Make sure the kielbasa is cooked thoroughly. When rice is done, add Cream of Onion and Cream of Mushroom soup, can of peas or green beans and kielbasa with brown sugar sauce. This can be served immediately. It heats up well as leftovers.
