After roasting a Beef Sirloin roast a few days ago, and didn't eat it all. I put it in the refrigerator for a few days. (I guess it was a pound and a half.) Took it out of the fridge and sliced it up, put it in a crock pot with a couple of cans of beef broth, and let if cook. Sliced up a few bell peppers and a onion, and sauteed them, placed it on a hoagie roll, with a side cup of Au-Jus.

Ingredients For kentucky's-beef & peppers sandwich w/au-jus

  • 11/2 lb
    beef sirloin roast, cooked and sliced
  • 2 can
    (14-oz each) beef broth
  • salt and pepper to taste
  • 1 md
    onion, peeled, cut in half and 1/4-inch slices
  • 1 md
    red bell pepper, seeded and cut into 1/4-inch slices
  • 1 md
    green bell pepper, seeded and cut into 1/4-inch slices
  • 2 Tbsp
    olive oil
  • salt and pepper to taste
  • 1/4 tsp
    red pepper flakes, optional
  • pasteurized cheese, cheddat, optional
  • 1 pkg
    (6) hoagie rolls

How To Make kentucky's-beef & peppers sandwich w/au-jus

    In a 2-1/2 to 3 quart crock pot, place the sliced beef and beef broth with salt and pepper to taste. Put crock pot on high and cover for 2 hours, or until meat is hot and tender.

    About a half hour before the beef is ready to pull out of crock pot, slice the bell peppers and onion.

    Place a large skillet with oil, on medium-high heat. Put the onion, bell peppers, salt and pepper to taste and red pepper flakes if desired. Saute until tender crisp.

    Take the saute vegetables out of skillet, place in a bowl. Take the beef out of crock pot, and place in a bowl. Take the Au-Jus for the crock pot and place in a little bowl.

    Take a hoagie roll, put beef and vegetable in the roll, and put cheese on it(if desired). Take a small bowl of Au-Jus and place it next to sandwich.

    OR, don't use the cheese and place the beef sandwich next to Au-Jus. ENJOY!!!
