I very good friend of mine shared this recipe with me. My husband says it's the best meatloaf he has ever tried!

Ingredients For kelly's meatloaf

  • 2 lb
    ground beef, thawed
  • 3 Tbsp
    brown sugar
  • 1/8 c
    chopped onion
  • 1 c
    oatmeal, uncooked
  • 1
    egg
  • 2 tsp
    worcestershire sauce
  • 1 can
    whole peeled tomatoes
  • 2 pinch
    salt and pepper
  • GLAZE
  • 3 Tbsp
    brown sugar
  • 1/2 c
    ketchup

How To Make kelly's meatloaf

    Combine ground beef, brown sugar, chopped onion, egg, worcestershire sauce, tomatoes, salt and pepper.

    Add oatmeal to firm, about 1 cup. Round mixture and place into baking dish.

    In a small bowl, combine ketchup and brown sugar to make a glaze. Pour over top of "loaf". Bake uncovered at 350 degrees in oven for 1 hr and 15 mins. Enjoy!

    NOTES: I have even omitted the tomatoes and it still turned out moist and yummy! You can use diced tomatoes if you prefer. I serve this dish with mashed potatoes and steamed veggies.
