I found a recipe for a chinese casserole like my mom had made. I was so hungry for it that I went searching for her recipe. Here it is! I hope you enjoy it as much as I do!

Ingredients For karen's chinese caserole

  • 2 lb
    very lean ground beef
  • 1 lg
    sweet onion - chopped
  • 2 c
    celery - sliced
  • 2 can
    cream of mushroom soup
  • 3 c
    cooked rice (this is about equal to 1 1/2 cups uncooked rice)
  • 1/2 c
    soy sauce
  • 2 can
    sliced water chestnuts - drained
  • 1 pkg
    chow mein noodles

How To Make karen's chinese caserole

  • 1
    Brown hamburger in dutch oven/large pot with the chopped onion and sliced celery.

    When hamburger is cooked through and the onion and celery are tender add the drained water chestnuts, soy sauce, cream of mushroom soup and prepared rice. Cover and cook on low heat until heated through.

    Serve hot with chow mein noodles on top.
