I wanted something different tonight so I made this recipe up for our Meat loaf. I am sure no one has it cause I did not see it in a book or on the internet just thought of the things I like that are good and put it together. Hope you agree it is moist, juicy and good tasting.

Ingredients For jamie's meat loaf

  • 1 lb
    ground beef
  • 1/2 lb
    i used jimmy deans sausage
  • 1/2 c
    diced bell pepper
  • 1/2 c
    diced sweet onion
  • 2
    egg
  • 3 clove
    fresh pressed garlic
  • 1 Tbsp
    salt
  • 2 tsp
    ground black pepper
  • 1 can
    10oz. ro tel diced tomatoes and green chili
  • 1 can
    8oz. tomatoe sauce
  • 1/2 c
    enchilada sauce
  • 1 c
    panko bread crumbs

How To Make jamie's meat loaf

    In large mixing bowl mix together the ground beef and the sausage well.

    Make a well in the center. Beat the two egg and pour in the well.

    mix the ro tel, tomatoe sauce and enchilada sauce together and pour in.
  • 4
    Add all the remaining ingredients and mix well. Bake in a deep baking dish or loaf pan. 1hr and 10 min or until done on 350 degrees in oven. At the end spoon some enchilada sauce on top and heat about 5 minutes longer.
