My husband favorite meal! Adapted several recipes and made this one to share.

Ingredients For instant pot - meatloaf and potatoes

  • FOR THE MEATLOAF
  • COMBINE THE FOLLOWING INGREDIENTS
  • 1 lb
    ground beef
  • 1/3 c
    bread crumbs
  • 1 lg
    egg
  • 1/2 tsp
    minced onion
  • 1/2 tsp
    granulated garlic
  • 2 Tbsp
    milk
  • pinch
    salt and pepper to taste
  • FOR THE VEGETABLE
  • 6 sm
    red or white potatoes
  • 1 c
    chicken broth or water
  • MEATLOAF GLAZE
  • 1/2 c
    ketchup
  • 1 Tbsp
    balsamic vinegar
  • HINT: CONFIRM THE INTERNAL TEMPERATURE OF THE MEATLOAF IS AT LEAST 155º WITH FOOD THERMOMETER

How To Make instant pot - meatloaf and potatoes

    In large bowl, mix the ingredients together and make the Meatloaf. Put meatloaf in a small 5 inch metal cake pan. Set aside.

    In your Instant Pot liner, add 1 cup water or chicken broth. I used broth for extra flavor
  • 3
    Put potatoes in the broth. Add trivet. Hint: I ordered another trivet with longer legs for this purpose. That way the PIP would be above the items in the bottom pot.

    Add potatoes to broth in pot.

    Put the trivet in and place the small pan of meatloaf on the trivet.
  • 6
    Cover with the lid and lock into place. Make sure the pressure release valve is set to "Sealing"

    Select Manual and cook at High Pressure for 20 minutes. Turn off and release the steam valve to QR. When the Pot has finished releasing the pressure, carefully open the lid.

    Take the meatloaf out of the IP. Be very careful! Make meatloaf glaze.(Optional). Spread on top and sides of meatloaf. Put meatloaf under broiler for 2-3 minutes, until sauce begins to bubble.

    Serve with Little potatoes.
