instant pot - meatloaf and potatoes
My husband favorite meal! Adapted several recipes and made this one to share.

Ingredients For instant pot - meatloaf and potatoes
- FOR THE MEATLOAF
- COMBINE THE FOLLOWING INGREDIENTS

1 lbground beef

1/3 cbread crumbs
-
1 lgegg
-
1/2 tspminced onion
-
1/2 tspgranulated garlic
-
2 Tbspmilk
-
pinchsalt and pepper to taste
- FOR THE VEGETABLE
-
6 smred or white potatoes
-
1 cchicken broth or water
- MEATLOAF GLAZE
-
1/2 cketchup
-
1 Tbspbalsamic vinegar
- HINT: CONFIRM THE INTERNAL TEMPERATURE OF THE MEATLOAF IS AT LEAST 155º WITH FOOD THERMOMETER
How To Make instant pot - meatloaf and potatoes

1In large bowl, mix the ingredients together and make the Meatloaf. Put meatloaf in a small 5 inch metal cake pan. Set aside.

2In your Instant Pot liner, add 1 cup water or chicken broth. I used broth for extra flavor

3Put potatoes in the broth. Add trivet. Hint: I ordered another trivet with longer legs for this purpose. That way the PIP would be above the items in the bottom pot.

4Add potatoes to broth in pot.

5Put the trivet in and place the small pan of meatloaf on the trivet.

6Cover with the lid and lock into place. Make sure the pressure release valve is set to "Sealing"

7Select Manual and cook at High Pressure for 20 minutes. Turn off and release the steam valve to QR. When the Pot has finished releasing the pressure, carefully open the lid.

8Take the meatloaf out of the IP. Be very careful! Make meatloaf glaze.(Optional). Spread on top and sides of meatloaf. Put meatloaf under broiler for 2-3 minutes, until sauce begins to bubble.

9Serve with Little potatoes.
