Found this stew recipe in Ma's recipe file box we found in NC in July 2019. It was folded up with a recipe for Spiced Fruit Compote (already in JAP).

    salad oil
  • 1 md
    clove garlic
  • 5 lb
    beef stew chunks
  • 3
    6 oz cans tomato paste
  • 2 1/2 c
    water
  • 1 Tbsp
    paprika
  • 2 tsp
    salt
  • 1 tsp
    pepper
  • 1
    bay leaf
  • 2
    8 oz boxes macaroni
  • 2 Tbsp
    butter
  • 1 Tbsp
    parsley
  • 1 Tbsp
    grated lemon peel
  • 1/2 tsp
    caraway seed

How To Make hungarian stew, ma

    In 8 qt DO in hot salad oil, cook garlic for 1 min, and discard. Add stew meat and onions until meat is lightly browned. Stir in tomato paste, water, paprika, salt, pepper and bay leaf and heat to boiling. Reduce heat and cover and simmer for 2 hours. About 30 min before done, prepare macaroni. Drain and toss gently with butter and parsley. To serve, sprinkle stew with lemon peel and caraway seed.
