Best hash I have ever created! During this time of pandemic, money and groceries are tight. I created this to use up leftover beef from the day before's dinner for breakfast so nothing would be waisted. It surpassed my expectations!

Ingredients For hash with eggs using leftover beef

2 cleftover cooked beef, shredded or chopped

1 Tbspvegetable oil

4 mdpotatoes, peeled and cubed

1/2 mdonion, chopped

1/2green bell pepper, chopped

1/2red bell pepper, chopped

3/4 cbroth, stock, or au ju

1 Tbspdried minced garlic

salt and pepper to taste

6-8 lgeggs
How To Make hash with eggs using leftover beef

1Sat and pepper the potatoes. In a large, deep skillet add oil. Turn on to medium heat. Once hot, not smoking, add potatoes in an even layer and let brown for about 5 minutes without stirring.

2Stir well. Add peppers, onion, dried minced garlic, and beef and stir well. Let cook for about 4 minutes.

3Add the stock (or broth or Au Ju). Bring to a simmer, cover, turn heat down to medium-low. Let cook for about 8 minutes, stirring occasionally. Check it to see if potatoes are tender. Once potatoes are tender crack eggs on top. Sprinkle with salt and pepper to taste.

4Cover and let cook on medium-low until eggs are done to your liking. I did about 8 minutes for almost all the way cooked through.

5Remove from heat. Enjoy immediately!
