I always hated meatloaf and avoided it. Then I had the idea to make one to suit my taste. Now it's one of my favorite dishes. The flavor comes from the sauce which is based on my grandmother's chili sauce recipe. It's spicy, sweet and full of flavor! If you're ready for a meatloaf that's not your mother's meatloaf give this one a try.

Ingredients For hanky waving meatloaf
- SAUCE

2 can15 oz size diced tomatoes

1large onion, chopped

1 csugar
-
3/4 capple cider vinegar

3 tspcinnamon, ground

1 tspginger powder
-
2 tspcayenne pepper (more or less depending on the heat you like)

1 tspsalt
- MEATLOAF

2 lbground beef
-
1/2 conion, chopped
-
1/2 ccelery, chopped

1 cstale bread crumbs, soaked in milk (drain excess milk before using)

2eggs

1/2 tspgreek seasoning
-
3/4 csauce from recipe included here

salt and pepper
How To Make hanky waving meatloaf

1SAUCE

2Mix together the dry ingredients for the sauce in a saucepan.

3Add the rest of the ingredients and bring to a boil.

4Cook over medium heat until it is reduced by half and thickened. Stir frequently.

5Remove from heat to cool slightly. If too hot when added to the meat it will cook the meat in places.

6TO MAKE THE MEATLOAF

7Preheat oven to 350

8Mix together all of the ingredients and place in a loaf or meatloaf pan. I try to keep the top flat and even a little higher on the sides to contain the sauce that's placed on top.

9Generously top the meatloaf with the sauce. If you can resist putting it all on, reserve a little to serve on the side.

10Bake until it reaches 165 degrees in the middle. About an hour but this varies based on how thick it is.
