My husband who is a professional chef once cooked at an Irish pub this was his recipe for Guinness Beef Stew.

Blue Ribbon Recipe

A robust and thick beef stew recipe that's perfect over mashed potatoes. The meat and carrots are cooked to perfection in the Guinness. Adding pearl onions and fresh thyme adds fantastic flavor. Honey is an unusual stew ingredient but it adds a bit of sweetness to the stew. This is a meal to put on the stove and simmer on St. Patrick's Day. It's the perfect stew for a cold day but does take a little TLC.

Ingredients For guinness beef stew

  • 1 lb
    beef stew meat
  • 4 md
    carrots, sliced
  • 6 sprig
    fresh thyme
  • 1 1/2 bottle
    Guinness (or other good stout beer)
  • 1 pkg
    frozen pearl onions
  • 1/2 c
    water
  • 1/2 c
    all-purpose flour
  • 1/4 c
    honey (or to taste)
  • salt and pepper

If you have an issue finding frozen pearl onions, substitute with an 8 oz package of fresh pearl onions. You will have to clean and peel them.
  • Trimmimg the stew meat.

    Trim and dry stew meat.
  • Browning the beef in oil.

    Heat a bit of oil in a large pot. Add meat and brown.
  • Adding sliced carrots to the pot.

    Add sliced carrots.
  • Adding Guinness to the pot.

    Add Guinness until meat and carrots are covered.
  • Simmering the stew.

    Simmer for about one hour. Check to make sure meat is tender and to your liking.
  • Onions and thyme added to the pot.

    Add onions and thyme. Continue to simmer for 30 more mins.
  • Flour and water whisked together.

    Mix flour and water in a bowl until smooth.
  • Slowly adding the slurry.

    Slowly add to the stew and cook until thickened.
  • Adding honey, salt, and pepper.

    Now add honey, a little at a time, salt, and pepper. Taste and adjust seasonings.
  • Pouring beef stew over mashed potatoes.

    Serve over mashed potatoes.
