EASY, BREEZY, QUICK, QUICK! Just something I made up one night when I wanted to make something QUICK and had ground beef in the fridge, salsa, and wheat tortillas. Great served with cooked rice.

Ingredients For ground beef salsa corn roll ups

1 lbground beef
-
4 ozsalsa, your favorite

1/2 cshredded cheddar cheese (or Monterey Jack or pepper jack)

1/2 cfrozen yellow corn
-
6-8wheat tortillas
- GARNISH OPTIONS

sour cream
-
shredded lettuce
-
chopped tomatoes
-
black olives
-
avocado
-
guacamole
-
canned black beans, drained
How To Make ground beef salsa corn roll ups

1Cook ground beef in a skillet until no longer pink. Drain off grease.

2Add salsa, shredded cheese, and frozen corn to the skillet. Stir to blend and heat over low heat until well blended and warm.

3Heat wheat tortillas in the oven wrapped in foil until warmed through (or microwave them).

4Place a warm tortilla on a dinner plate. Spoon about 3 Tbsp ground beef mixture down the middle of the tortilla. Add garnishes of your choice: guacamole, chopped tomatoes, olive slices, drained and cooked black beans, shredded lettuce, etc. Roll the tortilla up to enclose the filling.
