Need a quick and easy dinner? These ground beef salsa corn roll ups can be on the table in under 30 minutes. Ground beef is mixed with your favorite salsa for a flavorful and juicy filling. Shredded cheese and frozen corn are mixed into the jazzed-up ground beef. The cheese gets nice and melty and there's pops of sweetness from the corn. Wrap the mixture inside a wheat tortilla and top use your favorite taco toppings. They're made with simple ingredients, it's a meal that can be tailored to suit your needs.

  • 4 oz
    salsa, your favorite
  • 1/2 c
    shredded cheddar cheese (or Monterey Jack or pepper jack)
  • 1/2 c
    frozen yellow corn
  • 6-8
    wheat tortillas
  • GARNISH OPTIONS
  • sour cream
  • shredded lettuce
  • chopped tomatoes
  • black olives
  • avocado
  • guacamole
  • canned black beans, drained

  • Cook ground beef in a skillet until no longer pink.

  • Add salsa, shredded cheese, and frozen corn to the skillet.

  • Heat wheat tortillas.

    Heat wheat tortillas in the oven wrapped in foil until warmed through (or microwave them).
  • Spoon the ground beef mixture down the middle of the tortilla. Add garnishes of your choice.

    Place a warm tortilla on a dinner plate. Spoon about 3 Tbsp ground beef mixture down the middle of the tortilla. Add garnishes of your choice: guacamole, chopped tomatoes, olive slices, drained and cooked black beans, shredded lettuce, etc. Roll the tortilla up to enclose the filling.
