My new little obsession of stuffing things has moved on to burgers. This is the first in what I'm sure is to be a series. It was off the hook delicious, and so juicy it needed NO condiments.

- BURGER #1 COTJIA AND JALAPENO

**cotjia or feta cheese

**sliced jalapenos

**ciabatta buns, or buns of your choice
- BURGER #2 PICO DE GALLO AND CHEDDAR

**ground chuck

**pico de gallo

**grated cheddar

**favorite bun

**black pepper
- CARAMELIZED ONION AND ASADERO CHEESE

**fresh ground chuck roast

**sweet onions caramelized in butter

**grated asadero cheese
How To Make stuffed burger series

1THIS IS THE METHOD I USE FOR PREPARING THE BURGERS: Form a fairly large patty and pat down. Lay some cheese in center along with whatever other ingredient your are using. "Fold" beef up and over cheese and pepper and pat into a plump firm burger.

2THIS IS THE GRILLING METHOD I USE FOR COOKING THE BURGERS, WHICH COULD ALSO BE COOKED IN A SKILLET: I grilled mine on my outdoor gas grill, barely searing the outside, then moving to the opposite side where the was no flame and cooked it for about 30 min with indirect heat turning once, grill was reading 350°. Cook longer for a more well done burger.

3#1 COTJIA AND JALAPENO PEPPER BURGER: I used cotjia cheese, which is very similar to feta. I used candied sliced jalapenos (Uncle Gary's) and Ciabatta buns instead of regular hamburger buns and my family and all agreed we liked them better!! 8/31/13

4#2 PICO DE GALLO AND CHEDDAR: I used grated cheddar and pico de gallo and coated the meat in black pepper. I used Ciabatta bun on this one as well. 9/10/13

5#3 CARAMELIZED ONIONS AND ASADERO CHEESE: I caramelized some sweet onions in butter, then grated the asadero, which is similar to muenster cheese, stuffed it, grilled it and served on a ciabatta bun. 9/14/13
