I just love the flavor of fresh chili peppers and I love chili rellenoes. This is something I put together using both items in an easy-to-eat item. I have also roasted the chilis and peeled them before stuffing them and putting them in the burrito. But the fresh chili gives it a different texture and flavor. Enjoy.

Ingredients For green chili burrito

1 lbground chuck

1 tspminced garlic

2 Tbspchopped onion

1/2 tspchili powder
-
1 tspcumin
-
1 tspcoriander
-
salt and pepper to taste

1 cshredded, cheddar or mexican blend cheese

4 to 6long green chili peppers
-
4 to 6burrito size flour tortillas, warmed
How To Make green chili burrito

1Crumble ground chuck into a large skillet heated to medium low.

2Add garlic, chopped onion, chili powder, cumin, coriander, salt and pepper and cook the meat until done. Stir occasionally so the meat won’t burn.

3Drain the liquid from the meat mixture.

4Add cheese and mix well until cheese is melted.

5Cut the stem end from each chili pepper and remove the seeds and membranes.

6Fill each pepper with the meat mixture.

7Wrap each meat-filled pepper in a warm flour tortilla, burrito style.

8Great served with your favorite salsa.
