I was getting my hair cut and my hairdresser and I were discussing recipes. He started describing this corned beef recipe, and I tried to remember it the best I could. Turned out to be great!

3 lbcorned beef brisket

4 cwater

1/2 ccoarse grain mustard

2 ccurrant jelly
-
1/2 cruby port or other sweet red wine

1/2 cshallots,chopped

1 1/2 Tbsplemon zest

1/4 cfresh lemon juice
-
1 Tbsporange zest
-
1 Tbspdry mustard
-
1 1/2 tspground ginger
-
1 1/2 tsppepper
-
1/2 tspsalt
-
1/2 cbrown sugar, firmly packed
How To Make glazed corn beef

1Place the brisket in a large Dutch oven. Add the water and bring to a boil. Cover, reduce heat, and simmer for 2 1/2 hours.

2Drain the brisket. Place the brisket in a 8 inch square baking dish. Spread the mustard over the brisket and set aside.

3Combine the jelly and the next 9 ingredients in a medium saucepan; stir well. Cook over medium-low heat until the jelly melts, stirring constantly. Pour the jelly mixture over the brisket. Sprinkle with the brown sugar.

4Bake, uncovered, at 350º for 45 minutes, basting occasionally with the pan juices. Transfer the brisket to a serving platter and enjoy!
