I have been making this recipe since the early 80's. It's a good light, but filling zucchini lasagna. Try it and let me know how you like it. :)

Ingredients For gardener's lasagna

1 3/4 lbzucchini, sliced thin lengthwise

1 lbground beef
-
1 clovegarlic, minced
-
8 ozcan tomato sauce 1 to 2 cans

1 tspsalt

2 tspitalian seasoning
-
1 csmall curd or low fat cottage cheese

1egg, beaten
-
1 Tbspparsley
-
1/2 cparmesan cheese
-
2 cmozzarella cheese, grated

1/4 cbread crumbs
How To Make gardener's lasagna

1Brown ground beef with garlic until cooked through. Drain off excess fat. Stir in tomato sauce, salt and Italian seasoning.

2Mix together cottage cheese, beaten egg and parsley. Set aside.

3Use a 11 3/4 x 7 1/2 x 1 3/4 inch baking dish. Alternate layers of sliced zucchini, cottage cheese mixture, ground beef, Parmesan cheese, mozzarella cheese and bread crumbs. Repeat till all ingredients are gone. Make 350°F for 45 minutes to 1 hour.
