Mom used to make this with leftover mashed potatoes. Now I use Idahoan Instant Potatoes. I like them a lot and it makes this recipe easier.

Ingredients For frosted meatloaf

1/3 cquick oats

1/3 ccatsup

1/2 tspeach salt and pepper

1 1/2 lblean ground beef

4servings warm mashed potatoes, prepared

1/2 cshredded cheddar cheese (or more if preferred)
How To Make frosted meatloaf

1Preheat oven to 350 degrees. In a large bowl beat egg slightly. Add oats, catsup, salt and pepper and mix well. Mix in ground beef. Shape into a loaf and place in an 8 by 4 inch loaf pan. Bake for 1 hour and 15 minutes.

2Prepare mashed potatoes while meatloaf is baking. Add a bit more liquid than called for usually so potatoes will spread easily. Remove meatloaf from oven, cool a bit. Remove from pan and drain. Place on a large oven proof pie plate or serving plate. "Frost" or cover meatloaf on sides and top with mashed potatoes. Bake for 15 minutes more. Sprinkle cheese on top and return to hot oven until cheese is melted. Slice and serve.
