Ingredients For fluffy light meat loaf

1 lbground beef

1/4 tspfreshly ground black pepper

1/2 tspsalt

1/4 tspfinely chopped garlic

1egg, lighly beaten

1 Tbspfresh parsley, chopped

1 smonion, finely chopped

2 Tbspwheat germ

2 Tbspbran

3 Tbspgreen pepper, finely chopped

1/2 coatmeal, uncooked

1 cantomato paste, 6 ounces

chili sauce
How To Make fluffy light meat loaf

1Preheat oven to 350 degrees.

2Combine all loaf ingredients, using your hands.

3Form into loaf and place in 9x5x3\" loaf pan, cover with layer of chili sauce (or ketchup if desired), bake 50 minutes to 1 hour.

4(Do not overbake, since part of the secret of fluffiness is shorter cooking time.)

5Serve the meat loaf sliced and hot.

6Variation: Half ground veal and half ground beef can be used for the meat loaf--lower in calories.
