I had never made or really eaten meatloaf until my husband and I got together. He is a real meat and potatoes man so I decided to find a recipe that would please him as well as satisfy my need for something a bit more healthy! I tweaked a recipe a few times and came up with this one; it has become a staple on our growing family's dinner table!

Ingredients For flavorful meatloaf
- MEATLOAF

1egg, beaten
-
2/3 cmilk
-
2 sliceswhole grain bread, toasted and crumbled

1 cshredded cheddar cheese

1onion, finely chopped

1carrot, shredded
-
1zucchini, shredded
-
1 tspsalt
-
1/4 tsppepper
-
dashworcestershire sauce
-
1 lbground beef
-
1/2 lbground pork or ground lamb
- SAUCE
-
1/4 cpacked brown sugar
-
1/4 cketchup
-
1 Tbspspicy mustard
-
1 Tbspworcestershire sauce
How To Make flavorful meatloaf

1Combine first 10 ingredients. Add meat and mix well.

2Press into loaf pan

3Combine sauce ingredients and spread over meatloaf

4Bake at 350 for 60-75 minutes or until internal temperature reads 160.

5Drain and let stand 10 minutes before slicing. Serve with mashed potatoes.
