Ingredients For fireman bob's irish corned beef my way.....

3 to 4 lbcorned beef brisket - your choice - brined by you or store bought...

12whole peppercorns

2whole bay leaves

6 mdred potaotes peeled

1 ccelery - cut into 1 inch pieces
-
1 mdyellow onion - cut into small wedges
-
1 mdhead of green cabbage cut into 6 wedges

1 cred bell pepper - cut into 1 inch pieces
-
1 1/2 Tbspsnipped parsley
-
1 1/2 Tbspsnipped chives

1 Tbspyellow mustard
How To Make fireman bob's irish corned beef my way.....

1Rinse off beef brisket with cold water. Place brisket in large dutch oven, add the bay leaves, peppercorns, and mustard. ( Mustard being optional ) Cover tightly and simmer 3 to 4 hours until meat is tender. About 40 minutes before the brisket is done, add the potatoes, cook for another 15 minutes covered. At this time, place the celery, onions in and cook for another 3 to 5 minutes. Now place the cabbage on top of the vegetables, cover tightly once again and cook for another 17 to 20 minutes.
