filet essentials: pan-seared beef filet
A quick sear in a hot, skillet is all you need for an elegant repast. To me this dish is all about flavor, and it's all about presentation. I love to serve this recipe with some garlic mash potatoes, a nice sauce, some matchstick carrots on top, and if you you're being decadent, maybe a knob of herb butter. Ingredients For filet essentials: pan-seared beef filet

1 mdfilet, about 1.5 inches (3.8cm).

salt, kosher variety, to taste

black pepper, rough grind, to taste

1 Tbspsweet butter, unsalted

How To Make filet essentials: pan-seared beef filet

1PREP/PREPARE

2Gather your Ingredients (mise en place).

3Place a rack in the middle position, and preheat the oven to 425f (220c).

4Sprinkle the filet with salt and pepper.

5Add the oil and butter to an ovenproof skillet over medium-high heat.

6When the butter melts, and the foaming subsides, add the filet.

7Sear about two minutes per side.

8Place the skillet into the preheated oven, for 5 minutes.

9Remove from the oven, and allow to cool for five minutes.

10PLATE/PRESENT

11Serve with some garlic mash potatoes, and maybe a veggie. Enjoy.

12Chef’s Note: When I’m doing filets, I avoid putting cheese or other ingredients into my mash potatoes; just some baked garlic, salt, pepper and milk. I don’t want the side dishes to overpower the taste of that wonderful filet.
