Add a little 'ole to your meatloaf with this dish. Serve with some Mexican rice on the side and you have a tasty meal.

Ingredients For fiesta meatloaf

  • 1 1/2 lb
    lean ground beef
  • 3/4 c
    unseasoned dry bread crumbs
  • 1
    egg, beaten
  • 1 can
    4-oz can chopped green chilies, drained
  • 1/2 c
    cheddar cheese, shredded
  • 1 pkg
    taco seasoning packet 1.25 oz.
  • 1 md
    tomato, chopped
  • 1/2 c
    green onions, chopped
  • 2 Tbsp
    ketchup
  • 1 Tbsp
    salsa
  • 1/2 tsp
    seasoned salt

How To Make fiesta meatloaf

    In a large bowl or food processor, combine ground beef, bread crumbs, egg, chiles, cheddar cheese, and taco seasoning. Blend well, but do not over mix.

    Pat meat into a loaf pan and bake in a 350 degree oven for approximately 1 hour or until meat is cooked through. Remove and let stand 10 minutes.

    In a small bowl, combine remaining ingredients. Slice meatloaf into slices and spoon tomato mixture over slices.

    Note: If using packaged taco seasoning, you may want to lessen the amount of salt in the topping.
