Ingredients For fiesta meatloaf

1 1/2 lblean ground beef

3/4 cunseasoned dry bread crumbs

1egg, beaten
-
1 can4-oz can chopped green chilies, drained

1/2 ccheddar cheese, shredded
-
1 pkgtaco seasoning packet 1.25 oz.

1 mdtomato, chopped
-
1/2 cgreen onions, chopped
-
2 Tbspketchup
-
1 Tbspsalsa
-
1/2 tspseasoned salt
How To Make fiesta meatloaf

1In a large bowl or food processor, combine ground beef, bread crumbs, egg, chiles, cheddar cheese, and taco seasoning. Blend well, but do not over mix.

2Pat meat into a loaf pan and bake in a 350 degree oven for approximately 1 hour or until meat is cooked through. Remove and let stand 10 minutes.

3In a small bowl, combine remaining ingredients. Slice meatloaf into slices and spoon tomato mixture over slices.

4Note: If using packaged taco seasoning, you may want to lessen the amount of salt in the topping.
