This is a great dish and pretty simple to make. Now the reason I put down the servings as 8-12 is it all depends on how many of those filled tortillas will fit into a baking dish. I usually end up with about 7 or 8.

Ingredients For enchiladas

1 lbbeef
-
2 Tbspolive oil

1 mdonion (chopped)

1 canenchilada sauce
-
8-12flour tortillas

3 cgrated monterey jack cheese
-
1 cansliced black olives
-
cilantro
How To Make enchiladas

1Brown beef in oil with the onion and olives. Add about 1/2 of the can of enchilada sauce.

2Pour remaining enchilada sauce into a 9 x 12 baking dish. (this allows the enchiladas not to stick on the dish and gives you that great enchilada flavor)

3Preheat oven to 350 Degrees F

4Spoon about 3 tablespoons of filling into each tortilla sprinkle on some cheese and fold (kinda like a burrito) Then place into baking dish

5Sprinkle remaining cheese and cilantro (to taste) onto enchiladas

6Bake for 25 - 30 minutes or until heated through.
