Ingredients For enchilada casserole

  • 1 lb
    ground beef
  • 1 md
    onion, chopped
  • 1 can
    16-oz cream of mushroom soup
  • 1 can
    16-oz chicken broth
  • 1 can
    16-oz enchilada sauce
  • 1 pkg
    corn tortillas, cut in fourths
  • 3-4 c
    sharp cheddar cheese, shredded
  • 1 can
    chopped black olives (optional)
  • chili pepper to taste (optional)

How To Make enchilada casserole

  • 1
    Brown ground beef and onions in large skillet until done. Add cream of mushroom soup, chicken broth, enchilada sauce and chili pepper (if used) and simmer for 30 minutes. In a 9x13 casserole dish layer half of the tortilla pieces, meat sauce, cheese and repeat. Top with chopped black olives if desired. Bake at 350 degrees for 45-50 minutes
