How To Make enchilada casserole, cass's
-
1Enchilada sauce: Mix all ingredients in a small saucepan, stirring well. Simmer for 15 minutes; stirring occasionally, set aside.
-
2Gather ingredients. Preheat oven to 350 degree. Spray a 13 x 9 baking dish with cooking spray.
-
3Cut tortilla's into triangles. You don't have to do this, just is easier to cut through and serve.
-
4In a medium skillet, brown ground beef till no longer pink; drain. Return to skillet. Add the seasonings and water, simmer for about 10 minutes. After simmering; add sour cream, green chiles, olives and beans if using, stir. Heat through, set aside
-
5Now, place two layers of soft corn tortillas; cover with a little of the enchilada sauce. Space large spoonfuls of the meat filling 2" apart on top of the sauce, and sprinkle with 1/2 the cheese.
-
6Top with another double layer of soft corn tortillas. Ladle some more sauce over the soft tortilla's, then repeat with the meat and end with remaining cheese.
-
7Bake in a preheated 350 oven for about 40 - 45 minutes; or until browning and bubbly. Serve with sour cream, green onions or whatever you prefer.
-
8You can make this early in the day and then just pop it into the oven at dinner time. If you do that, add about 10 minutes to the baking time.
