Ingredients For enchilada casserole

1 lblean ground beef

1 lgchopped onion

2 cthick bottled salsa

1 can15 oz black beans, drained and rinsed

1/4 creduced-fat italian salad dressing

2 Tbsptaco seasoning mix

1/4 tspground cumin
-
6flour tortillas (8 in) or corn tortillas
-
3/4 creduced-fat sour cream (not necessary)

1 cshredded cheese (mexican blend is good)
How To Make enchilada casserole

1In large skillet, cook hamburger, onion until meat is no longer pink. Drain. Stir in salsa, beans, dressing, taco seasoning, cumin. Place three tortillas in 2-qt. baking dish coated with cooking spray. Layer with half of meat mixture, sour cream (opt.) and cheese. Repeat layers.

2Cover and bake at 400 degrees for 25 min. Uncover; bake 5-10 min. longer or until heated through. Let stand 5 min before serving. Top with lettuce, tomato and cilantro if you want to pretty it up.
