This is so fast, easy and so yummy. It's a quick go to recipe when you're craving enchilada's but don't have the time to wrap them or just get tired of making the same ole recipe time and time again. You can easily double the recipe too. This one never lasts in our house. Recipe is my own. Picture is my own of a double batch.

Ingredients For enchilada bubbles-annette's

1 lbground turkey or beef
-
1 smonion, chopped
-
1 canrotel's tomatoes & green chilies, drained

1 can8 oz tomato sauce

1 can10 oz enchilada sauce

2 Tbsptaco seasoning
-
1 canrefrigerated biscuits
-
1 1/2 cmexican cheese blend, shredded

salt and pepper
How To Make enchilada bubbles-annette's

1Preheat oven to 350 degrees. Season turkey or beef with salt and pepper to taste, taco seasoning, and onion. Brown until done then drain if needed.

2Mix in enchilada sauce, tomato sauce 1/2 shredded cheese and drained tomatoes and chilies.

3Cut the refrigerated biscuits into fourths and stir them in the meat mixture.

4Pour mixture into a greased casserole and bake for 25 minutes. If doubling recipe, bake for 50 minutes.

5Take out of oven and sprinkle cheese on top. Bake an additional 10 minutes. Let stand for 5 minutes before serving. Enjoy!

6Serve with home made guacamole. YUM!
