At this time of year there are many, many special chili recipes for Super Bowl celebrations which are submitted by USA chefs. I love them all; however not to be outdone by my American counterparts, and in celebration of our Canadian football, Grey Cup competition between the two best teams in Canada - one from the East and one from the West, I respectfully submit my own recipe for Elaine's Grey Cup chili. Although developed to enjoy during the "Grey Cup", I say this delicious fare can be enjoyed during any other celebration.... vis a vis. Super Bowl, Stanley Cup, after school, or no reason..

Slow Cooker Crock Pot
Ingredients For elaine's grey cup chile
-
2 lbground beef (you may prefer ground turkey or ground chicken
-
1 can19 fl oz. small red kidney beans, with juice
-
1 can19 fl oz. white kidney beans, with juice
-
1 can28 fl oz. seasoned, roma (italian) tomatoes
-
1/2 cyour favourite barbeque sauce
-
1/2 cdry, red wine
-
2 mdyellow onions, chopped
-
1whole head garlic; peeled, crushed and chopped.
-
2red bell peppers, (seeds removed) chopped.
-
4whole, carrots, peeled, sliced thinly and chopped.
-
1/3celery stalk; top 1/3 of stalk, chopped. include ribs and leaves.

1 cmushrooms; peeled and sliced thinly. stems included
-
3 Tbspchili powder
-
3 Tbsp(heaping tbsp) caribbean, all natural, all purpose seasoning

1/2 tspsmoked black pepper
-
goose grease; or olive oil for browning ingredients. l use goose grease.
How To Make elaine's grey cup chile

1All ingredients will be added to a large slow cooker (or crock pot, so-called, if you prefer) Initial setting on HIGH.

2In a large pan, brown the ground beef until all fat has been rendered. Remove meat from pan and set aside.

3In the same pan, saute the onions, garlic and chopped peppers. Add all to the slow cooker.

4In the same pan, saute celery, carrots and mushrooms. Increase goose grease or olive oil as required. Add all to slow cooker.

5Combine red kidney beans and white beans with their juices, Roma tomatoes, barbeque sauce and dry red wine with the sauteed ground beef which you have set aside. Add all to slow cooker.

6At this point, add all the seasonings.... Chili powder, Smoked black pepper and Caribbean all purpose seasoning. Mix well in slow cooker to blend.

7Cover slow cooker and allow to simmer on HIGH for 3 hours. After 3 hours, reduce setting to LOW, and allow to simmer for additional 3 hours

8At the end of the cooking time, reduce setting to WARM until you are ready to serve.

9To serve, top with shredded cheese(s) in individual bowls. Enjoy with your favourite crusty rolls or baguette and sides of your choosing.
