Ingredients For eggplant lasagna

  • 1 lg
    eggplant peeled and thinly sliced
  • 1 lb
    lean ground beef or turkey
  • 1 jar
    any brand of spaghetti sauce
  • 1 lg
    onion chopped (optional)
  • 1 pkg
    mozzarella cheese, low-fat

How To Make eggplant lasagna

  • 1
    Brown beef with onion. Addsauce when meat is done and let simmer a few mins.Coat bottom of an 8x12 casserole dish with sauce, add layer of eggplant, more sauce and cheese. Continue to layer that way until eggplant is gone,ending with a final layer of sauce and cheese. Bake in preheated oven 350* for about 45 mins. or until eggplant is tender. Serve with green salad and french bread.
