Ingredients For eggplant lasagna

1 lgeggplant peeled and thinly sliced

1 lblean ground beef or turkey

1 jarany brand of spaghetti sauce

1 lgonion chopped (optional)

1 pkgmozzarella cheese, low-fat
How To Make eggplant lasagna

1Brown beef with onion. Addsauce when meat is done and let simmer a few mins.Coat bottom of an 8x12 casserole dish with sauce, add layer of eggplant, more sauce and cheese. Continue to layer that way until eggplant is gone,ending with a final layer of sauce and cheese. Bake in preheated oven 350* for about 45 mins. or until eggplant is tender. Serve with green salad and french bread.
