My family loves this because it's so easy to make that any of us can throw it together and it's so versatile everyone can make it their own. Wrap it up into a burrito! Serve over chips! Use as a taco salad filling! My son uses it in the sandwich maker to make his own 'hot pockets'. Freezes well.

Ingredients For easy versatile tex-mex meal

1 lblean ground beef

1 pkgtaco seasoning mix

1 cantomato with green chiles (rotel)

1 caneach ranch style and black beans

1 cancorn, undrained

3/4 cinstant rice (uncooked)

1 lbvelveeta, cubed
-
optional - jalapenos, black olives, lettuce, sour cream, salsa, onions, chips, corn or flour tortillas
How To Make easy versatile tex-mex meal

1Brown the meat with the taco seasoning.

2Add remaining ingredients except cheese. Simmer, covered, approx 15 mins until rice is cooked to taste.

3Stir in Velveeta. Let sit a few minutes to soften then stir again to mix.

4Add optional ingredients as desired. Or put all optional ingredients out for each person to complete their plate their way!
