My husband has never been a fan of meatloaf, claiming it is always to "bready," dry and flavorless. After tasting this recipe, he's a new fan.

Ingredients For easy spicy meatloaf

1 lbground beef (80/20)

1 1/4 tspsalt

1/4 tspfresh ground black pepper

1/2 conion, finely chopped

1/2 cgreen bell pepper, finely chopped (or pablano pepper)

1/2 cred or yellow pepper, finely chopped
-
1 Tbspcanola oil
-
1egg, lightly beaten
-
10 ozcan rotel "original"
-
1/2 cquick-cooking oats
-
1 Tbspworcestershire sauce
- TOPPING:
-
8 oztomato sauce (basil, garlie & oregano)

6 oztomato paste (basil, garlic & oregano)

1/4 csugar (or splenda)
-
2 tspapple cider vinegar
-
2 tspyellow mustard
How To Make easy spicy meatloaf

1Preheat oven to 350 degrees.

2In a small mixing bowl, whisk together topping ingredients and set aside.

3In a large mixing bowl, add ground beef, salt and pepper. With a fork, lightly "stir/separate" ground beef.

4In a skillet with a small amount of canola oil, saute onions and peppers for 8 to 10 minutes or until onions become translucent. Remove from heat.

5Add egg, Rotel, oats, Worcestershire sauce and sauteed pepper mixture to hamburger. Gently mix with clean hands until ingredients are incorporated.

6Transfer to a 13x9 baking pan and shape meat mixture into a "loaf." Pour topping mixture on top and sides if desired.

7Bake uncovered for 1 hour. Let stand 10 minutes before serving.
