easy shepherd's pie
This started as my Mom's recipe which I've tweaked over the years. When you have leftover mashed potatoes, it makes a quick and easy dinner. I change up the veggies depending on what is on hand. Sometimes I add corn instead of peas.

Ingredients For easy shepherd's pie

1 1/2 lbground beef

2 lgcarrots, finely chopped

1 lgonion, finely chopped

1/2 lbmushrooms, sliced

1/2 cfrozen peas

2 pkgbrown gravy powder

1 cwater
-
3 cleftover mashed potatoes

1/2 tsppaprika (for sprinkling)
How To Make easy shepherd's pie

1Preheat oven to 350 F. Brown ground beef, with onion, carrot and mushrooms. When beef is browned and veggies are almost cooked, add the gravy mix and water. Bring to a boil, stirring until gravy is thickened.

2Add peas and put mixture into a 2 quart casserole dish.

3Add leftover mashed potatoes over beef mixture. Sprinkle paprika on top and bake uncovered for 45 minutes.
