Since my men are meat and tater guys, they have enjoyed this. It is so easy. It is a main dish recipe that can be served with salad. Tried and true for 40 years!

Ingredients For easy meat and taters

3 cmashed potatoes, prepared ahead or use left overs

2 cancampbells vegetable soup

1 lbground beef
-
1 smonion, chopped

1 smbell pepper, chopped

1 pinchsalt and black pepper

1 ccheddar cheese, grated (optional)

1/2 csour cream (optional)
How To Make easy meat and taters

1Prepare mashed potatoes or use left over mashed potatoes. Set aside. Cook meat, onion, pepper and drain. Add salt and pepper. Pour mixture into oven proof serving dish. Pour soup evenly over meat mixture. Do not stir. Spread potatoes over this mixture. Heat in oven about 350 degrees for 20 minutes or until mixture is hot. Sprinkle a little grated cheddar over top to serve and 1 teaspoon sour cream on each serving.
