easy marinated london broil

My family loves beef and with the rising cost of beef these days, I'm always looking at cheaper cuts and ways to dress it up so it's flavorful and affordable. London Broil is one of those cuts of sirloin that can intimidate some cooks because it can be a bit tough to chew if you don't give it time to tenderize in a good marinade. This marinade is easy and delicious. I came up with the recipe after tweaking a few others I reviewed and my husband feels it's the best! Pair it with some sautéed mushrooms and onions alongside a serving of rice pilaf or a baked potato and you have a hearty meal!

Ingredients For easy marinated london broil

  • LONDON BROIL
  • 2 lb
    London broil or sirloin cut steak (1-1/2 to 2-1/2 lbs)
  • 3/4 c
    light olive oil
  • 3/4 c
    dark brown sugar
  • 1/3 c
    balsamic or red wine vinegar
  • 1-1/2 Tbsp
    kosher salt, or to taste
  • 2 tsp
    ground black pepper, or to taste
  • 1 Tbsp
    minced garlic
  • 2 Tbsp
    Worcestershire sauce
  • 2-3 sprig
    fresh rosemary
  • 1/2 tsp
    chili pepper flakes, or to taste, optional
  • SAUTéED MUSHROOMS AND ONIONS
  • 8 oz
    sliced mushrooms
  • 1 sm
    sweet onion, roughly chopped
  • 2 Tbsp
    salted butter
  • salt and pepper, to taste
  • 1/4 c
    reserved marinade

How To Make easy marinated london broil

    Use a fork or knife to poke holes in the London Broil thoroughly on both sides which helps tenderize the meat. Coat liberally with up to 1/2 TBSP of the kosher salt to both sides and allow to sit for 20-30 minutes so that the salt begins to break down the meat fibers. You don't have to salt and rest your meat before marinating but it does help tenderize and add flavor.

    In a plastic storage bag: add the remaining ingredients (oil, brown sugar, vinegar, salt, pepper, garlic, Worcestershire sauce, rosemary and optional chili flakes). Squish the ingredients together in the bag to mix everything together.

    Place the London Broil steak into the marinade bag (it's not necessary to brush off the salt but you can if you're trying to reduce sodium intake). Remove air from the bag and seal the bag. Place in a bowl or on a plate. Put in the refrigerator to marinade. NOTE: The longer you marinade, the more tender the meat. My preference is to marinade overnight for 24 hours to optimize tenderness, but a lot of recipes direct you to marinade for at least 3 hours. I didn't include marinating in the prep time because of this. It takes less than 10 minutes to pull all of the ingredients together, but the real prep time is in however long you decide to let the meat marinade. You can get London Broil tender if you take the time to marinade, so don't miss this step. I cooked one after marinating for about 5 hours and it was very tasty but had some tough spots. The one I allowed to marinade for 24 hours was tender and full of flavor.

    Heat your grill. Place the steak on the grill and allow to sear on each side for about 6 to 7 minutes per side or until internal temperature reaches about 130-135 degrees. Remove from heat and allow to rest on the slicing board 10 minutes before slicing.

    While the meat is resting, melt 2 TBSP butter in a saute pan. Add the onions and mushrooms, salt and pepper to taste. Stir/saute for 3 to 4 minutes. Add 1/4 cup of the reserved marinade to the mushrooms and onions. Stir together until heated. Serve with the steak and other side dish. We fixed a rice pilaf with ours and it was delicious!

    VERY IMPORTANT: To serve the London Broil, SLICE THIN, cutting on the short grain/bias! A thinly sliced London Broil is truly delicious.
