Ingredients For easy flat iron steak in wine sauce

1 lgbeef flat iron (or skirt) steak cut into 4 steaks

2 Tbspolive oil (for spice paste rub)

1/8 tspcayenne pepper (don't be afraid it'll be too

1 tspcracked black pepper

1 Tbsppaprika, sweet mild

1 tspsalt

1 1/2 tspdry mustard

1 1/2 tspgarlic powder

3 Tbspolive oil (for searing steaks)

1/2 cburgundy wine
-
1 ccanned mushrooms (or fresh sauted)

1 tspbalsamic vinegar
-
2 Tbspbutter
-
1/2 tspkitchen bouquet (for a browner sauce)
How To Make easy flat iron steak in wine sauce

1Allow the steaks to come to room temperature (important)

2Wisk 2 T olive oil, cayenne pepper, paprika, pepper, salt, mustard powder, and garlic powder.

3Prick steaks with a fork and rub them well with the paste. Let sit for 30 miniutes.

4Heat your cast iron skillet med. hot and add the remaining 3 T of olive oil. When smoking, add 2 of the 4 steaks (all 4 if your skillet is large enough). Sear to desired doneness without burning the spices (turn down and cover if need be). I prefer a med steak instead of Jackie B.'s recommended rare.

5Remove steaks from skillet with tongs and let rest.

6add red wine, balsamic vinegar, and kitchen bouquet to skillet. Stir in mushrooms. Simmer until all is reduced somewhat, and hot.

7Turn off heat and add butter.

8Serve steaks with sauce over the top, some crusty bread, a small baked potato, and veggie of your choice if desired.

9Serve with burgundy wine in your goblet.
