This is so simple, yet so yummy. I have included a low sodium/fat option as well. This could also be a vegetarian dish by leaving off the sausage and hamburger.

Ingredients For dos beans and rice
- RICE

2 cinstant brown rice
-
1 3/4 cwater
-
15 ozcan of diced tomatoes, no salt added

1 1/2 tspcumin

1 tspgranulated garlic

1/2 tspgranulated onion
-
1/2 tspblack pepper
- BEANS
-
215 oz. cans of red beans, drained and rinsed
- SAUSAGE OPTION
-
1-2 lbsmoked sausage links, sliced
- HAMBURGER OPTION-LOWER SODIUM/FAT

1-2 lbground round
-
1 tspgranulated garlic

1 tspgranulated onion

1 tspcumin
-
1 tspchilli powder
-
1 tsppaprika
-
1/2 tspblack pepper
How To Make dos beans and rice

1RICE: Add water and tomatoes, juice and all to pot, bring to a boil, add rice and spices. Cook per box instructions.

2BEANS: Drain and rinse beans well. Set aside.

3SAUSAGE OPTION:In a large skillet place sausage slices and brown. Add drained and rinsed beans and rice. Stir together well. Remove from heat. Top with salsa or shredded cheese.

4HAMBURGER LOWER SODIUM/FAT OPTION: Scramble up and brown ground beef with seasonings. When beef is fully cooked, add drained and rinsed beans and rice. Stir to mix well. Remove from heat.
