An excellent for carb and fat challenged folks who would like to enjoy the famous Philly cheesesteak sandwiches from time to time. Ok, so no, it's not a sandwich but it has the beef and cheese and it's yummy in it's own right. Not to mention so much better for us!

Ingredients For diabetic philly cheesesteak peppers

1 Tbspcanola oil

1 Tbspmargarine

1 cthinly sliced onion

1 1/2 csliced mushrooms

2 tspminced garlic

1/4 tspsalt

1/4 tspblack pepper

4 slicelow-salt deli roast beef, cut into 1/2-inch strips

4 slicemozzarella cheese, cut in half

2 lggreen bell peppers, sliced in half, seeds removed
How To Make diabetic philly cheesesteak peppers

1Preheat oven to 400 degrees F.

2In a large skillet over medium heat, heat oil and margarine and saute onions, mushrooms, garlic, salt and black pepper for 10-12 minutes, or until tender. Remove from heat and stir in roast beef. Place a piece of cheese inside each green pepper and fill evenly with meat mixture. Cover with foil and bake 20 minutes.

3Remove foil, then top with remaining cheese and return to oven for 5 minutes, or until pepper is tender and cheese is melted
