Ingredients For dads crispy meatloaf

  • 2 lb
    ground turkey breast or ground lean beaf
  • 1-1/2 c
    italian-style bread crumbs
  • 2
    eggs
  • 1/2 c
    water
  • 2/3 c
    ketchup, divided
  • 1/2 tsp
    each, salt & pepper
  • 1/2 tsp
    garlic powder
  • 1/2 c
    all purpose flour
  • 2
    eggs
  • 1-1/2 c
    panko bread crumbs
  • 1/2 tsp
    each, salt & pepper
  • 1 c
    canola oil

How To Make dads crispy meatloaf

    Heat oven to 350. Spray a 9" x 13" baking pan w/ cooking spray. In lg bowl, combine ground turkey, or beef, italian bread crumbs, 2 eggs, water and ketchup, except reserve 1/3 cup ketchup.

    Add 1/2 tsp salt and pepper and garlic powder. Mix well w/ hands and place on baking sheet. Shape into a lg loaf. Spread reserved ketchup over loaf. Bake for 1 hr. Cool 2 hrs.

    When cool, slice meatloaf into 3/4" slices. Place flour in a shallow bowl. Place eggs in another shallow bowl and lightly beat. Place panko crumbs in another shallow bowl. Add 1/2 tsp salt and pepper to panko crumbs and mix. Coat each slice of meatloaf in flour, then eggs, then panko crumb mix. Heat oil in lg skillet over med-high heat. Fry meatloaf slices in oil 2 mins on each side. Drain on paper towels.
