Ingredients For curried meatballs

1 tspcoriander seeds

1 tspcumin seeds

1/3 cbutter

3 Tbspginger, peeled and minced

2 lbground beef

1 Tbspsalt

2 tspground black pepper

1/2 tspcayenne pepper

3 cwhole milk yogurt

1 1/2 ccucumber, peeled, seeded and finely diced

How To Make curried meatballs

1Sauce directions: In a small saute pan, toast coriander, cumin seeds and cardamom until you begin to smell the spices.

2In a large sauce pot, melt butter and saute onions until translucent.

3Add ginger and garlic, cook until you smell both.

4Add seasonings and tomatoes. Cook over low heat for 30 minutes.

5Using an imersion (stick) blender or food mill, blend ingredients until smooth. Add cream and cook 10 minutes on low.

6Meatball directions: Place bread crumbs and cream in a large bowl. Let sit until soft, approximately 20 minutes.

7In a small saute pan, heat curry powder, shaking pan constantly until you smell the curry. Set to the side.

8Melt butter in a saute pan, add garlic and ginger. Cook until tender.

9Mix meat, bread crumbs and spices until well blended. Form into meatballs, making sure that all meatballs are the same size. Place in mini muffin tins or on a cooling rack that is placed on a cookie sheet. Bake at 375 for 20 to 25 minutes or until cooked through.

10Add to sauce and simmer 10 minutes. Serve over steamed rice. Top with Raita, if desired.

11Raita directions: combine the yogurt,cucumbers and spices. Add more seasoning to taste. Serve as a condiment.
