I have always loved beef stroganoff and using the Crock Pot makes this recipe easy! I like to enjoy this with a fresh green salad and crusty bread and butter, with fruit salad for dessert.

This beef tips stroganoff is the ultimate easy Crock Pot meal. It's a dump-and-go recipe, but the trick is adding some of the ingredients in stages. So delicious, your family will think you spent hours in the kitchen over the stove. The beef is tender in a thick, creamy, and flavorful sauce. Herbs, like thyme, clove, and oregano, go perfect with red wine and beef broth. Adding egg noodles and sour cream at the end keeps the noodles from becoming soggy. This is a fantastic meal for a busy family.

Ingredients For crock pot beef tips stroganoff

  • 2 lb
    beef tips or stew meat
  • 1 pkg
    onion soup mix
  • 1 tsp
    thyme, dried
  • 1/2 tsp
    oregano, dried
  • 1/4 tsp
    clove, ground
  • 4 Tbsp
    Worcestershire sauce
  • 5 - 6 oz
    mushroom pieces, fresh or canned
  • 1 can
    mushroom soup, condensed (10.5 oz)
  • 1 c
    dry red wine (I used merlot)
  • 2 c
    beef broth or water
  • salt and pepper, to taste
  • 1 c
    sour cream
  • 10 oz
    egg noodles, uncooked
  • cooking spray

How To Make crock pot beef tips stroganoff

  • First 11 ingredients added to the slow cooker.

    Spray Crock Pot with cooking spray, I used canola. Add the first 11 ingredients to Crock Pot in the order listed.
  • Setting the beef tips stroganoff to cook in the slow cooker.

    Turn on high and cook for one hour. After one hour, stir ingredients thoroughly. Continue to cook on high for 3.5 more hours.
  • Sour cream added to the slow cooker.

    After a total of 4.5 hours on high, stir in sour cream to blend throughout the mixture.
  • Egg noodles added to the slow cooker.

    Then add egg noodles, ensuring they are covered by liquid. Add more water, if necessary. Adjust salt and pepper, as needed. Cook an additional 30 minutes on high, until noodles are tender. Plate and enjoy!

    NOTE: For those of you that do not cook with wine, you can substitute 1/2 - 3/4 cup beef broth (or water) and 2 - 3 Tbsp each of lemon juice and balsamic vinegar. Can be cooked on low setting for 6 - 8 hours. Add sour cream and noodles for the last 45 minutes of cooking time.
