5 slicebacon

2-3 lblondon broil or beef chuck

1 ccabernet sauvignon

2 cbeef broth
-
1/2 cantomato paste (3oz)

2 Tbspsoy sauce
-
1 Tbspworcestershire sauce

1/4 cflour
-
3 clovegarlic, finely chopped

2 Tbspfresh thyme
-
5-6carrots
-
1 bagpearl onions
-
8baby red potatoes
-
8 ozfresh sliced mushrooms
-
1/2 stickbutter
-
chopped parsley or thyme for garnish
How To Make crock pot beef bourguinon

1finely chop the bacon and render it down in a large skillet until crisp. Then put it over into the crock pot.

2Cube up beef into 1 inch cubes, Salt and pepper the beef and sear until brown on all sides. Transfer to slow cooker.

3Add the cabernet to the skillet stirring up all the brown bits and bring to a simmer.

4In a bowl on the side, whisk the tomato paste together into the beef broth, add the thyme, garlic, worcestershire and soy sauce. Add the mixture to the cabernet in skillet, bring again to a simmer. Sprinkle in the flour and whisk. whisk in the 1/2 stick of butter then pour sauce over meat in crock pot.

5Quarter the potatoes, chop carrots to desired size (I like them rustic and chunky) peel the pearl onions and add all of it into the crock pot. Add the sliced mushrooms and stir lightly.

6Cook on high 5-6 hours or low for 9-10 hours. Sprinkle with chopped thyme or parsley garnish and serve with a rustic crusty bread or garlic toast. Enjoy :)
