For my daughter's fourth grade field trip we went to a 100 year old pueblo and i was helping in the kitchen. They made this for the kids and adults everyone loved it.I'm still cooking it years later. So simple and delish.

2 lbbeef rump roast

3 cmedium salsa

1yellow pepper

1 tspsalt

1-30oz jarnopalitos(cactus in a jar)
How To Make cowboy ranchero beef

1Cut into 1 1/2 inch cubes, or any beef that is pre-cut will work. Cook till just browned. Rinse nopalitos in colander.

2Add salsa and nopalitos mix until combined. Add yellow pepper and cover for about 45 minutes on low heat stirring occasionally.

3Check to make sure its fork tender and enjoy with rice, beans and tortillas.
