Ingredients For cowboy casserole

1 lbground beef (or turkey)

1 canchopped green chilis

1 pkgtaco seasoning

1 tspchopped garlic
-
1/2 tspsalt
-
1 tspchili powder
-
1chopped onion
-
1chopped and seeded bell pepper

1 canro-tel tomatoes
-
1 canpinto beans (do not drain)

1 ccooked rice
-
1 cbeef broth
-
3/4 canshredded cheddar cheese
How To Make cowboy casserole

1Preheat oven to 350 degrees. grease a 2-quart casserole dish (preferable glass)

2Brown meat until crumbly. Drain excess fat

3Add garlic, salt, onion, bell pepper, chili powder, green chilies and taco seasoning. Saute for 5 minutes until vegetables are limp.

4Mix in tomatoes, beans (and juice) and rice. Stir together and pour into casserole dish. Pour broth over the top and bake uncovered for 45 minutes.

5Top with cheese and bake additional 15 minutes. Serve
