1 1/2 lbground beef

4 Tbspcanola oil, divided use

2 stalkcelery, chopped

1 smgreen bell pepper, chopped

3/4 conion, chopped

1 cuncooked rice

1 can(28 oz) diced tomatoes

2 tspsalt
-
2 tspchili powder
-
1/2 tspblack pepper

1 tspworcestershire sauce
-
tabasco sauce, to taste

1 clarge black olives, chopped (divided use)

8 ozjack or pepper jack cheese, sliced
How To Make cowboy casserole - no beans!

1Preheat oven to 325F.

2Heat 2 tablespoons of the oil in a skillet and brown the ground beef. Drain. Place browned beef in a 2 quart casserole.

3Add remaining 2 tablespoons oil to the same skillet. Add the celery, green pepper, onion and rice to the skillet. Cook until the rice is browned, stirring constantly to avoid burning.

4Add the undrained tomatoes, salt, chili powder, pepper, Worcestershire sauce, and half the olives. Add Tabasco to your taste. Mix well and bring to a boil. Pour over the ground beef in the casserole dish.

5Cover dish tightly with foil and bake for 1 hour. Layer the remaining olives and cheese over the top and broil for 5 minutes or until the cheese is bubbly.

6Optional serving suggestion: Top with sour cream, cilantro, and green onions.
