I found this receipe a couple of years ago. As a foster parent of 2 teenagers I never knew how many mouths I was going to feed. This is quick and filling and everybody loves it. I do often buy a large quanity of ground beef and before I freeze it I will chop 1 onion and cook the ground beef and onion. This cuts down a step in the process. This can also be frozen. To freeze leave off the shredded cheese.

Ingredients For cowboy casserole

1 lbground beef

2 canwhole kernel corn drained

1 cshredded cheddar cheese

2/3 cmilk

4 Tbspsour cream

3/4 tsponion powder

1/4 tspblack pepper

2 cfrozen tator tots
-
1 cancream of chicken condensed soup
How To Make cowboy casserole

1Brown ground beef and chopped onion until done. Stir in the corn, soup, 1 /2 cup cheese, milk, sour cream, onion powder, and pepper.

2Place 1 cup of tator tots in bottom of a 3 cup baking dish that has been sprayed with Pam or a cooking spray. Layer with beef mixture and remaining Tator Tots. Sprinkle with the remaining cheese.

3Bake uncovered at 375 degrees for 25 to 30 minutes or until bubbly.
