Ingredients For cowboy burger stuffed peppers

2 lbground beef or turkey

1 pkgcooked & crumbled bacon

3/4 cshredded sharp cheddar cheese

3/4 cshredded pepper jack cheese

1 cangreen chiles, drained

1/2 cfrench fried onions
-
1 tspblack pepper

1/2 tspsea salt
-
1/2 tspgarlic powder
-
1/2 citalian bread crumbs

1/2 cinstant potato flakes, dry

1 ccooked rice
-
1/3 cbbq sauce
-
1 Tbspprepared mustard
-
1egg

6-8large bell peppers
How To Make cowboy burger stuffed peppers

1Slice tops off peppers, set aside. Remove seeds from peppers & set aside.

2Combine all other ingredients in a large bowl. Get in there with your hands and mix till evenly distributed.

3Fill peppers to top with the meat mixture. Place tops of peppers back on. Wrap each pepper with aluminum foil.

4To cook peppers you can either place the wrapped peppers on a hot grill for approximately 30 minutes, turning every few minutes or so till done; OR, and this is my preferred way, you can place the wrapped peppers directly on the coals in the grill or the campfire for about 15-20 minutes, turning (carefully) every couple minutes. Take a thermometer to the middle of the meat to ensure a temperature of at least 160 degrees F.

5Remove peppers from grill/coals. Let sit wrapped for about 10 minutes, then unwrap & enjoy! Serve with some bbq sauce & pickle spears.
