Ingredients For cowboy burger stuffed peppers

  • 2 lb
    ground beef or turkey
  • 1 pkg
    cooked & crumbled bacon
  • 3/4 c
    shredded sharp cheddar cheese
  • 3/4 c
    shredded pepper jack cheese
  • 1 can
    green chiles, drained
  • 1/2 c
    french fried onions
  • 1 tsp
    black pepper
  • 1/2 tsp
    sea salt
  • 1/2 tsp
    garlic powder
  • 1/2 c
    italian bread crumbs
  • 1/2 c
    instant potato flakes, dry
  • 1 c
    cooked rice
  • 1/3 c
    bbq sauce
  • 1 Tbsp
    prepared mustard
  • 1
    egg
  • 6-8
    large bell peppers

How To Make cowboy burger stuffed peppers

    Slice tops off peppers, set aside. Remove seeds from peppers & set aside.

    Combine all other ingredients in a large bowl. Get in there with your hands and mix till evenly distributed.

    Fill peppers to top with the meat mixture. Place tops of peppers back on. Wrap each pepper with aluminum foil.

    To cook peppers you can either place the wrapped peppers on a hot grill for approximately 30 minutes, turning every few minutes or so till done; OR, and this is my preferred way, you can place the wrapped peppers directly on the coals in the grill or the campfire for about 15-20 minutes, turning (carefully) every couple minutes. Take a thermometer to the middle of the meat to ensure a temperature of at least 160 degrees F.

    Remove peppers from grill/coals. Let sit wrapped for about 10 minutes, then unwrap & enjoy! Serve with some bbq sauce & pickle spears.
