I adopted this recipe. And it was good. I have never made cubed steak like this before. It's very tender.

Ingredients For country-fried steak

4beef cube steaks

2eggs
-
2/3 cmilk
-
3/4 cflour
-
1 tspsalt

1 1/2sleeves saltine cracker crumbs

1/4 cvegetable oil
- GRAVY INGREDIENTS

1/4 cflour

1 cdiced onions

How To Make country-fried steak

1In a medium mixing bowl, beat eggs and 2/3 cup milk.

2Whisk in 3/4 cup flour and 1 teaspoon salt.

3Pour cracker crumbs into a soup plate or pie pan.

4Dip steaks first into the egg mixture and then into the cracker crumbs.

5Press crumbs into steaks.

6In a 12-inch skillet over medium-low heat, heat 2 tablespoons oil.

7Place prepared steaks in the heated skillet, and fry for 6 minutes on one side.

8Add the remaining two tablespoons oil, and fry 6 minutes on the other side.

9Remove steaks from pan.

10Prepare gravy: Stir 1/4 cup flour into drippings in the skillet.

11Add enough oil to wet the flour.

12Stir flour and oil until fully mixed; a bit at a time, whisk in milk, and deglaze the pan.

13Add onions, and after the milk comes to a boil, cook 1 minute longer.

14Stir in salt and pepper.

15Return steaks to pan, and cook another 20 minutes over very low heat.

16When turning steaks or moving them to the platter, slide a large spatula under the steak so as not to tear off the now moist batter.

17Spoon gravy over steaks, and serve.
