Ingredients For corned beef and cabbage slow cooker style

4 lbcorned beef brisket

3 Tbsppickling spice, usually included with brisket

1rutabaga, cut into wedges

1 lbcarrots, cut up

1 lbfingerling potatoes

1leek, cut into 3 inch pieces

1/2head cabbage, cut into wedges
-
1/3 chorseradish, drained
-
1/3 csour cream, fat-free

4-5 chot water
How To Make corned beef and cabbage slow cooker style

1Corned beef goes in the slow cooker with pickling spices spread over the top. Layer rutabaga, carrots, potatoes, and leeks IN THAT ORDER. Add 4-5 cups hot water, enough to cover meat completely. Cook high 7-8 hours.

2Microwave cabbage in a microwave safe dish with 2 cups of the cooking liquid from the slow cooker for 8 minutes.

3Boil, on stovetop in saucepan 1 cup of the cooking liquid until reduced by half, about 10 minutes. Mix with horseradish and sour cream.

4Slice the corned beef and serve with vegetables and sauce.
