Ingredients For corned beef and cabbage slow cooker style

  • 4 lb
    corned beef brisket
  • 3 Tbsp
    pickling spice, usually included with brisket
  • 1
    rutabaga, cut into wedges
  • 1 lb
    carrots, cut up
  • 1 lb
    fingerling potatoes
  • 1
    leek, cut into 3 inch pieces
  • 1/2
    head cabbage, cut into wedges
  • 1/3 c
    horseradish, drained
  • 1/3 c
    sour cream, fat-free
  • 4-5 c
    hot water

How To Make corned beef and cabbage slow cooker style

    Corned beef goes in the slow cooker with pickling spices spread over the top. Layer rutabaga, carrots, potatoes, and leeks IN THAT ORDER. Add 4-5 cups hot water, enough to cover meat completely. Cook high 7-8 hours.

    Microwave cabbage in a microwave safe dish with 2 cups of the cooking liquid from the slow cooker for 8 minutes.

    Boil, on stovetop in saucepan 1 cup of the cooking liquid until reduced by half, about 10 minutes. Mix with horseradish and sour cream.

    Slice the corned beef and serve with vegetables and sauce.
