My family has been making this casserole for decades. I'm not sure where the recipe orginated, maybe mom made it up. It is so good, a one pot meal. Throw it together and shove it in the stove:) Photos to be posted later.

Ingredients For connie's kansas city casserole

3 lblean beef short ribs
-
2 tspsalt
-
1/8 tsppepper
-
1medium onion, sliced

1 Tbspchopped parsley
-
1/2 csliced celery
-
2medium potatoes, quartered
-
1 Tbspprepared horseradish
-
28 oz. tomatoes sauce with tomato bits
How To Make connie's kansas city casserole

1Cut beef into serving size pieces.

2Trim off any excess fat.

3Sprinkle beef with salt and pepper.

4Place ribs into casserole.

5Brown meat in the oven, uncovered for 1 hour at 400 degrees.

6Remove casserole from oven and drain off fat.

7Add onions, parsley, celery, potatoes, horseradish, and tomatoes to casserole dish.

8Stir casserole ingredients.

9Bake an additional 1 hour at 375 degrees.

10Great with a salad....Enjoy!
