Ingredients For cj's chili

  • 1 lb
    lean ground beef
  • 1 clove
    garlic
  • 1 lg
    onion
  • 1 md
    green pepper-finely chopped
  • 4 Tbsp
    chili powder
  • 1 Tbsp
    apple cider vinegar
  • 1/4 tsp
    allspice, ground
  • 1/4 tsp
    coriander
  • 1 tsp
    cumin
  • 1/2 tsp
    salt (add to taste)
  • 1/2 c
    water
  • 32 oz
    tomatoes crushed
  • 1-16 can
    red kidney beans - undrained

How To Make cj's chili

    Cook ground beef, chopped garlic, chopped onion & chopped green pepper in heavy skillet, over medium-high heat; until onion is soft, ground beef is no longer pink. Stir frequently, breaking up ground beef.

    Add remaining ingredients, bring to boil, cover and ***reduce heat. Simmer for 45 to 1 hour. Stir frequently. Garnish with chopped fresh onion, shredded cheese or other favorites.

    Suggested adjustments for "Hotter Chili" add favorite hot sauce to taste: more "Flavorful Chili" cook an hour longer: "Beanless Chili" omit beans, increase lean ground beef by 1 pound: "Thicker & Fuller Chili" add a Tablespoon of Mesa (Corn Flour.)

    Hints: Measure out all ingredients before cooking. ***Short on time, transfer ingredients to Slow Cooker after bringing to boil. Stir occasionally. Cook on low for 6 to 7 hours or high for 4 to 5 hours. Add water if too thick.
