This year for Cinco de Mayo I grilled some burgers, dressed them up with hot sauce and cheese, and served them between sauteed corn tortillas topped with guacamole and cilantro. You can make this as spicy as you like, I'd call this version medium. This is certainly not an authentic Mexican dish, but muy delicioso!

These Cinco de Mayo burgers are a twist on a classic hamburger filled with warm spices. The burger itself is simple and has great flavor. They use corn tortillas instead of a bun is delicious. Frying them until slightly crisp helps to add more of a Mexican feel mimicking tortilla chips. Cheese on both sides of the burger adds the cheesiness you want on a cheeseburger. Mixed with the hot sauce, it's so good. Topping them with guacamole is a good addition. These remind us of a mix between a beef taco and a burger.

Ingredients For cinco de mayo burger

  • 1 md
    avocado
  • 1 md
    lime, juiced
  • 1 pkg
    Holy Guacamole salsa blend
  • 1 stalk
    scallion, chopped
  • 1/3 c
    chopped cilantro, divided
  • 1 lb
    lean ground beef
  • Kosher salt
  • freshly ground black pepper
  • Mrs. Dash Southwest Chipotle Seasoning Blend
  • 8 slice
    cheese, your choice
  • 8
    6-inch corn tortillas
  • 8 - 10 tsp
    Sriracha sauce
  • butter
  • canola oil

How To Make cinco de mayo burger

  • Chunks of avocado in a bowl with lime juice.

    Split open the avocado and slice it into 3/4-inch chunks. Pour lime juice over the avocado flesh and let the tanginess sink in.
  • Add guacamole mix, scallions, and cilantro.

    Add the packaged Holy Guacamole to the avocado and mix in the sliced scallions and half of the cilantro. Set aside and get ready to make the burgers.
  • Form 4 beef patties and season.

    From the pound of ground meat, form 4 burger patties. On both sides of burgers, liberally sprinkle Kosher salt, ground black pepper, and Mrs. Dash Chipotle Seasoning Blend.
  • Heat the grill.

    This would be a good time to heat the grill or indoor grill pan.
  • Cook on each side.

    Cook burgers for 3 - 4 minutes on each side.
  • Add Sriracha sauce to corn tortillas.

    On each of the 8 tortillas, spread about 1 tsp (or more) of Sriracha sauce
  • Add a piece of cheese and a burger.

    Add a slice of cheese. Top the cheese with a cooked burger.
  • Then top with another slice of cheese and a second corn tortilla.

    Then another piece of cheese. Top it with another tortilla with Sriracha sauce.
  • Fry one side of the tortilla.

    In a large skillet add a small amount of butter and oil. Place burger tortillas in hot oil and cook on medium until tortillas are light brown and cheese is melted.
  • Flip and fry the second side.

    Flip and cook the other side.
  • Top with the guacamole.

    Top the finished burgers with the prepared guacamole, maybe some sour cream, a dab or two of salsa, and reserved cilantro leaves. I cut my burger in half because I knew it would be a little messy, but I did eat it with my hands. Guac sliding down my chin and beef juices making their way down my elbows. Messy or not, I'm making these again.
